Our friends in The Cotswolds – Macaroni Organic

At The Cotswold Letting Agency we love local & we love authenticity! These guys are another example of “our kind of people” – local businesses making a real difference, with real passion…

Organic farmers @macaroni_organic who produce cereals, dairy, beef & lamb from their 4500 acres on the Gloucestershire/Oxfordshire border, don’t use any artificial fertilisers or sprays & rear all their animal on grass alone. The result is nutrient dense food that contains all the vital fats & proteins needed for a healthy balanced diet.

They believe strongly in the mantra: “you are what you eat”, & are passionate conservationists who farm in harmony with nature. Providing the right habitat & environment for wildlife is as important to them as producing food for human consumption.

Sam Phillips, the brains behind the operation, says ‘’ We have adopted a ‘Regenerative’ approach to what we do, as we build & replenish our soils for future generations. Our aim is to be have zero carbon emissions in 5 years; better still we hope to be able to capture more carbon than we emit. We plant ‘herbal ley’ grass mixes (made up of lots of different legumes, grasses & herb) which the animals thrive on. ”

The results are there for all to see; their food is available widely & is incredibly popular. A great reward for really considered & clever thinking by one of the best teams in the business…

Giffords Circus opens new ‘Winter Sauce’ restaurant

Winter Sauce takes up residence at The Old Gore Barn in Cirencester serving dinner on selected evenings, as well as Sunday lunches, throughout November and December.

Led by Circus Sauce executive chef, Ols Halas, Winter Sauce offers a set menu of hearty British dishes inspired by local, seasonal produce.

Dishes on the November menu include fillet of longhorn beef with pepper cream and truffle hash browns; wild mushroom and chervil dumplings; trout on the fire pit with crayfish sauce and winter brassicas; and crab apple, chocolate and pistachio meringue pudding.

Food is served banquet style on Emma Bridgewater crockery, inspired by Giffords Circus, with dinner service including five courses for £55 per adult and £30 per child – while a three course Sunday lunch costs £45 per adult and £25 per child.

‘The Old Gore provides us with a great venue with amazing facilities, we are looking forward to creating a dining experience like no other!’

The venue seats up to 100 guests with a bar on site run by The Old Gore Barn. The restaurant will also be available to hire exclusively for Christmas parties.

Winter Sauce opens on Friday 12 November 2021 with bookings being taken now.
